WHere is an easy interpretation of a cocktail found on a new drinks list. It's a large-volume pre-mixed which is packed with the flavours associated with holiday season, which makes it excellent for hosting a celebration. Reserve the remaining syrup you can use for morning drinks, desserts, or to make another batch of the drink.
Bikini Recipe
Yields 10 servings
To make the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put all the items in a pan, bring to a light boil, agitating until the sugar dissolves. Next, remove from the burner and let it to reach room temperature completely. Transfer to a sterilised bottle, seal and store in the refrigerator, it will last for around one month.
To make Batch Mix: Mix the specified liquids into a large bottle, allow it to infuse for one hour, then strain preferably using cheesecloth, so it's completely strained.
When ready to serve: Measure 85ml from the batch mix to a mixing glass filled with ice, and stir gently for a minute until cold. Strain into a cold coupe glass or similar, garnish with the cranberries adding the final touch using a quick spritz of mandarin oil over the drink.
